Chickpea and red lentil soup

Adapted this soup from a BBC Good Food recipe and it was pretty delicious! And so cheap.

Ingredients

3/4 cup of split red lentils
1 can of chickpeas
1 can of tomatoes
2 carrots chopped
1 red onion
2 teaspoons of cumin seeds
1 teaspoon of chilli flakes
1 teaspoon of paprika
1 teapsoon of ground coriander
850mls of chicken stock
Salt
Pepper
Fresh coriander
Greek yoghurt

Method

  1. Dry fry the cumin seeds and chilli flakes in a pot
  2. Add the olive oil and onion - fry for 5 mins
  3. Add the canned tomatoes, stock, carrots, and lentils
  4. Simmer for 20 minutes
  5. Add half the chickpeas - make sure they are rinsed first
  6. Blend the mixture in a blender
  7. Add remaining chickpeas and bunch of fresh coriander
  8. Add salt and pepper
  9. Stir until heated through
  10. Serve with more fresh coriander and greek yoghurt
